Cream of Pumpkin Soup with Royal Sauce and Crumbled Taralli with Truffle

Creamy, colorful, and authentically autumnal: a pumpkin soup with a final touch of unmistakable aroma and flavor.

Ingredients for 2 people:

  • 1/2 red onion
  • 4 leaves of fresh sage
  • 300 g pumpkin
  • 1 potato
  • 2 carrots
  • 350 ml vegetal broth
  • Extra virgin olive oil (to taste)
  • Salt (to taste)
  • Black pepper (to taste)
  • Royal Sauce
  • Taralli with Truffle

Method:

Heat 2 tablespoons of extra virgin olive oil.
Add the sage and sliced onion.

Once the onion is lightly browned, add the diced carrots, potato, pumpkin, and vegetable broth.
Season with salt and cook over low heat for about 20 minutes.

Finally, blend with an immersion blender and pour the soup into a bowl.

If desired, add the royal sauce and crumbled taralli using a piping bag or pastry syringe to give the soup a crunchy texture.
