Truffle Gnocchi with Broad Beans, and Scorzone Truffle
A dish that will be very special thanks to the savoury taste of broad beans, enhanced to the fullest by scorzone truffles.
Ingredients for 5 people:
1 kg fresh broad beans
3 spring onions
100 g guanciale
- Truffle Gnocchi
Method:
Shell the broad beans and set them aside.
Remove the spring onions and place them in a saucepan with a drizzle of oil.
Once browned, add the fresh broad beans and a cup of water.
Cook for 20 minutes.
When cooked, blend the broad beans to create a cream.
Cook the gnocchi in a pot of boiling water with a little salt.
When they float to the surface, they are ready to be drained and poured into the pot with the cream, with the heat turned off.
Stir to mix everything together.
Serve and add some guanciale cut into strips and browned in a pan to give the dish a crunchy texture.
Finish with shavings of scorzone truffle.
