Scorzone Truffle Flan
Ingredients:
Flan:
- 3 big potatoes
- 20 g milk
- 20 g grated cheese
- Extra virgni olive oil (to taste)
- Salt (to taste)
- Black pepper (to taste)
- Parsely (to taste)
- Breadcrumbs (to taste)
- Scorzone Truffle
Cream:
- 200 g fresh cream
- 100 g grated cheese
- 50 g butter
Method:
Boil the potatoes, mash them and add oil, salt, Parmesan cheese, black pepper and an egg.
Mix the mixture with your hands until smooth.
Put a drizzle of oil in a bowl and cover the bottom with breadcrumbs, where the potato mixture will then be placed.
Bake for 20 minutes, until golden brown.
In a saucepan, combine the cream at room temperature, butter, and grated cheese and bring to a boil.
The result should be a light cream that is not too thick.
Remove the flan from the oven and plate it.
Pour the cream over it to make the flan even more delicious.
Finish the dish with shavings of scorzone truffle.
Tips:
To make the recipe even more summery and refreshing, you can create another type of cream, such as a cream made with zucchini and basil.
