Spiced Poached Egg with Wild Herbs and Truffle
Ingredients:
- 2 eggs
- Black pepper (to taste)
- Salt (to taste)
- Wild herbs (to taste)
- Curry powder (to taste)
- Water (to taste)
- Extra virgin olive oil (to taste)
- 2 tablespoons white wine vinegar
- Scorzone Truffle
Method:
First, put the water in a pot and heat it up.
As soon as it starts to boil, pour in 2 tablespoons of white vinegar.
Using a whisk, create a whirlpool in the pot, where you can immerse the egg previously seasoned with spices, salt, and pepper.
Leave to cook for about 3 minutes.
Then plate up with the seasoned wild herbs, truffle shavings, and the egg, which should be firm on the outside and soft on the inside.
A simple dish with an exceptional taste.
