Crackers with Almond Flour, Coriander Oil, and White Truffle

Ingredients:

Mixture:

  • 2 g coriander oil
  • 295 g rice flour
  • 10 g yeast
  • 40 g extra virgin olive oil
  • 100 g almond flour
  • 25 g flaxseed flour
  • 280 ml water
  • Salt (to taste)

Topping:

  • Smoked salmon (to taste)
  • Cream cheese (to taste)
  • Mixed salad leaves (to taste)
  • White truffle

Method:

Place the sifted flour, oils, and salt in a stand mixer and begin to mix.

Next, add the water and yeast, continuing to knead for a few minutes until the dough is soft, smooth, and even.

When finished, roll out the dough with a rolling pin to obtain a very thin sheet.

Next, use a fork to make holes in the surface of the dough.
Brush with oil, sprinkle with coarse salt, and cut to the desired size.

At this point, bake at 185°C for 12 minutes.

When cooked, leave the crackers to cool, then fill them in layers with cream cheese, mixed salad leaves, and salmon.

Finally, add the grated truffle.
